My delicious chicken soup for those cold days when you want to eat something light, warm, and full of delicious vegetables. Also, for those days when you are prepared to combat congestion caused by a cold.
Ingredients:
· You can use any part of the chicken. I prefer to use ½ of the whole chicken. Cut the chicken into six pieces.
· 3-qt. of water.
· Garlic- 3 cloves- cut in two pieces each garlic.
· Ginger – 2 inches of ginger cut into four pieces.
· Carrots – 14 baby carrots - cut in ¼ inch circles.
· Tomato – 1 – cut in four pieces.
· Leak or celery - Half of a leak (cut in 3 pieces) or 4 stems of celery (cut each stem in 3 pieces).
· Half of a beet cut in ¼ in. slices.
· Potato – Two, cut each potato into four parts.
· Whole wheat Angel hair.
· Baby Spinach (hand full).
· Salt – it depends on your taste
Preparation:
· Put water on a deep pot and wait until starts boiling.
· Once it's boiling, add the chicken, garlic, ginger, carrots, tomato, leek, or celery and bring to a boil for the flavor of the ingredients to blend in (during this point you can add whatever veggies you want); and, add the salt.
· After all these ingredients are boiling for half an hour, you can taste the flavor, and see if it needs more salt. Then, add the potatoes and let them boil for another ten minutes until the potatoes are almost ready. Next, you can add angel hair (noodles). The noodles do not take more than 4 minutes to cook, so make sure the potatoes are cooked before you turn the stove off.
· Finally, one minute before you turn off the pot, you can add the spinach. This vegetable does not need much time to cook (just the hot soup can cook this vegetable without boiling).
Suggestions: You can add some dried /fresh oregano or not! With or without that it will be delicious!
