Cacao Granola

Preparing breakfast shouldn't be a challenging task. I give you an idea, but you can change or omit any ingredient for others that you like. About the sugar it has, try not to exceed it. Our gut microbiome doesn't need a lot of sweet!:P You can make this in bulk, so you don't have to worry about this meal during the week. Morning routines before work are already busy! So you want to have your healthy homemade granola ready for your busy mornings!:)


Ingredients:

2 cups of old fashioned rolled oats.

1/2 cup raw pumpkin seeds.

1/2 cup raw pecans.

1/3 cup organic unsweetened 100 % cacao powder.

1/4 cup organic unsweetened shredded coconut.

2 Tbsp whole chia seeds.

1/4 tsp salt.

1/4 cup of organic agave.

1/4 of organic coconut oil (melted).

1 tsp organic vanilla extract


Direction:

  1. Preheat the oven to 340°F (170°C) and line a baking tray with a piece of parchment paper.

  2. To a food processor, add oats, pumpkin seeds, pecans, cacao, coconut, chia seeds, and salt. Give it a few pulses to roughly chop the oats, seeds and nuts. If you don't have a food processor, you can also coarsely chop the nuts and seeds with a knife.

  3. Remove the blade from the food processor. If the blades can't be removed, transfer the contents to a large bowl instead. Add the agave, coconut oil, and vanilla and mix using a rubber spatula.

  4. Transfer the mixture to the baking tray and spread it out evenly. Let the granola bake in the oven on the centre rack for 20 - 22 minutes, stirring halfway to ensure even baking.

  5. Remove from the oven and allow the granola to cool completely. It will harden as it cools. Once is cool, you can serve this with milk, yogurt, frozen yogurt, fruit, hot oatmeal or any type of vegan milk.

Tips:

  • You can add some pieces of semisweet dark chocolate if you want to add this granola to a frozen dessert like a mango/banana frozen.

  • Also, you can put some fresh blueberries in the processor, so you can add a bit of berry flavor to the granola.

  • Refined coconut oil doesn't smell or taste like coconuts. Unrefined coconut oil tastes like coconut.

Storage:

  • Store granola in an airtight container or large glass jar in a cool, dry place for up to 3 weeks.
